Healthy blueberry bran pancakes

I’m going through a healthy pancake making phase at the moment – and blueberry and bran fit this description nicely.

In my world, it’s excellent motivation to get out of bed. They only take about 15-20 minutes from start to finish and I feel like I’ve started the day with something creative and yum. But regular pancakes aren’t really an ‘everyday’ food… but these totally can be.

Pumpkin, spinach and semi-sundried muffins

My life has changed and so has my appetite. So my dear Clever Muffin has to change with me. Expect more savoury. More high protein. Bigger bites. And who knows what else.

Bit of metaphor for my life really. Very poetic. In a Year 12 literature essay kinda way.

These muffins have two whole cups of pumpkin in them, a cup of spinach, NO BUTTER OR OIL (I know!) and seeds. A good high protein low sugar fix. (more…)

Blueberry lemon cornmeal muffins rippled open

These are my new favourite muffin. To date I have over 20 muffin recipes on this blog and these are now my favourite. That says something.

They have an awesome amount of blueberries in them (check), get a good amount of tang from the lemon (check), and the cornmeal and yogurt make them moist and heavy WHILE being low fat (check and CHECK!!).

Blueberries are one of those super foods that contain anti-oxidants. I realise, as I write this, that considering I just splurged on a face serum yesterday due to its promise of anti-oxidant goodness, I should really know why that’s a good thing. (more…)

Whoops. Did I have a blog I was supposed to update? My bad.

I’m in a play again (see below for some sneak preview shots). Which means I am as time poor as they get. It’s not that I stop baking when I’m time poor, a woman needs to eat, I just reach for the classics instead of trying new recipes.

So I thought I’d share some of my staple go-to’s that I posted when I’m pretty sure my readership consisted of me, and my family members I made sign up.

Heavy as a rich chocolate cake, RIDICULOUSLY low in calories. High GI (OK, I don’t actually know what that means, but with the oaty-carroty goodness I’m sure it is). I literally have one next to me as I type this. (more…)
