Why can’t I find this recipe on my site under ‘s’ for strawberry in ‘sweet muffins’ on my handy recipe index? Oh, because I haven’t posted it. I’ve blogged previously about past-Aimee and future-Aimee and how annoyed I get when I haven’t posted a recipe I want. Assuming you can accept that there are actually two versions of yourself at one time, I’m sure this makes sense to you too.

Four chocolate chia muffins

I’m all about the hippy hipster healthy food at the moment. Here are three important things to know about chia seeds:

1. They’re oh-so-healthy
They’re made up of protein, fat and dietary fibre. Plus there’s a heap of minerals including calcium, magnesium, iron, and phosphorous.

2. They’re grown in Australia.

Pumpkin, spinach and semi-sundried muffins

My life has changed and so has my appetite. So my dear Clever Muffin has to change with me. Expect more savoury. More high protein. Bigger bites. And who knows what else.

Bit of metaphor for my life really. Very poetic. In a Year 12 literature essay kinda way.

These muffins have two whole cups of pumpkin in them, a cup of spinach, NO BUTTER OR OIL (I know!) and seeds. A good high protein low sugar fix. (more…)

Apple, custard and white choc muffins

Let me tell you a story about men, and the mystery of custard powder.

While serving these Apple and White Choc muffins up to a couple of visitors at my house, a man asked “how do you get the custard in?”

Good question. Very good question.
